CHRISTMAS PUDDING

Preperation Time: 25 minutes.
Cooking Time: 25 minutes.
Serves: 8 .
Ingredients:
  1. 3 tsps sugar
  2. 3 tbsps butter
  3. 1 level tsp baking powder
  4. 3 tbsps powdered sugar
  5. 55 grams finely chopped cashewnuts
  6. 2 eggs
  7. 55 grams raisins
  8. 3 tbsps dry bread crumbs
  9. 55 grams chopped mixed peel
  10. 1 tsp vanilla essence
  11. 55 grams chopped dates
  12. 1/2 tsp ginger powder
  13. 1/2 tsp cardamom powder
  14. 1/2 tsp cinnamon powder
  15. vanilla ice-cream to serve


Method of Preparation:
 
Step 1: Separate the eggs.
 
Step 2: Cream the butter and powdered sugar very well.
 
Step 3: Add the egg-yolks, one at a time and beat very well.
 
Step 4: Mix all the dry fruits and peel. Sprinkle a little flour over them.
 
Step 5: Add the fruit and peel mixtures, spices and vanilla essence to the pudding mixture.
 
Step 6: Beat the egg-whites stiffly.
 
Step 7: Add the egg-whites, bread crumbs and baking powder to the pudding mixture.
 
Step 8: In a small vessel, mix 3 tsps of granulated sugar and 3 tsps of water. Melt until the liquid becomes dark brown and add to the pudding mixture.
 
Step 9: Grease a 175mm. diameter baking tin and spread the mixture in it. Cover and cook in a pressure cooker for 15 to 20 minutes.
 
Serve cold.
