VEGETABLES WITH ALMONDS

Preperation Time: 15 minutes.
Cooking Time: 10 minutes.
Serves: 6 to 8 .
Ingredients:
  1. 4 tbsps refined oil
  2. 150 grams green peas
  3. 1/2 tsp sugar
  4. 3 onions
  5. 1/2 tsp Ajinomoto powder
  6. 2 carrots
  7. 2 tbsps cornflour
  8. 3 cucumbers
  9. 2 ridge gourds
  10. 1/2 teacup almonds
  11. Oil for deep frying
  12. Salt to taste
  13. Green chillies in vinegar and chilli sauce to serve


Method of Preparation:
 
Step 1: Put the almonds in hot water for 15 minutes. Remove the skins. Deep fry in oil.
 
Step 2: Slice the onions.
 
Step 3: Cut all the vegetables into cubes.
 
Step 4: Heat the oil thoroughly in a vessel and add the vegetable and Ajinomoto powder. Cook on a high flame for 3 to 4 minutes.
 
Step 5: Mix the cornflour in 1 1/2 teacups of cold water and add to the vegetables.
 
Step 6: Add the sugar, almonds and salt and cook for 3 minutes.
 
Serve hot with chillies in vinegar and chilli sauce.
